As you guys know already now that I was born and raised in Jamaica and cooking is a love for me. I got the love to cook from my mother and father. Although, My mother did most of the cook and I learn from her. I love how passionate she was about cooking meals for our family of seven. People near and far enjoyed her flavorful meals and would look forward to eating her meals. Also, they would tell my mother how much she “put her foot in the food”.
This did not literally meant she did that instead they were saying how much she knows how to cook good. My mother is no longer here with me but her love for cooking is with me. And, I am holding onto that piece of her while I enjoy doing what she did best and that is cooking. So read on, as I share this Jamaican Curry Chicken a cultural dish that she taught me how to cook.
What is Jamaican Curry Chicken made of?
Jamaican curry chicken is a traditional dish found on the island of Jamaica that is popular amongst locals and tourists alike. It is cooked with a blend of Caribbean spices and curry powder the main ingredient. The dish is served with a side of rice and peas. The Ingredients
1). I use 1 Whole Chicken (3lbs)
2). 4 Tablespoons of Curry Powder
3). 1 1/2 Teaspoon Season Salt
4). 1 Teaspoon Garlic Powder
5). 1/2 Teaspoon of Scotch Bonnet Pepper
6). 1 Teaspoon of Badia Complete Seasoning
7). 2 pieces of Thyme
8). Half of chopped Green pepper and Onion
Preparation
- Cut up whole Chicken and wash with vinegar. Then marinate the chicken in a large bowl, mix the Jamaican curry powder, salt, season salt, complete seasoning, thyme, scotch bonnet pepper, garlic powder, chopped onion and green pepper. Massage the spices into the chicken until well coated.
- In a Large Skillet add 1 teaspoon butter, curry powder, chopped onion and green pepper. Then sautee for 2 mins.
- Add Chicken to skillet with 1/2 of water. Then cover and cook on medium heat, stirring occasionally for 1 hour or until tender.
- Thicken the sauce: In a small bowl, mix 2 teaspoons of flour and water until smooth. Stir the mixture into the saucepan and continue to cook, stirring constantly, until the sauce has thickened, about 2-3 minutes.
- Serve the Jamaican curry chicken over rice and peas of your choice. I did Gungo Peas and Rice. I will share that recipe in another upcoming blog post.
